The tomatoes must first be scalded in hot water for two minutes, then taken out so you can now peel the skins off easily. Afterwards, you cut up the tomatoes, then toss them in the pan and stir fry them until the juices start to come out, at which point, you take out the the tomato chunks and let the sauce flow into the bottom of the pan. Now add some oil, beat the eggs then add a pinch of salt and some sugar (because my taste lean on the sweet side), then add back in your tomato chunks. Lastly, after it cooks, just sprinkle with scallions.
